I love one pot meals. Makes clean-up easy!
Crock Pot Roasted Chicken and Veggies
Add chicken to crock pot and brush with butter and lemon juice. I used leg quarters.
Place desired veggies on top of chicken. I used potatoes, carrots, onions, and celery.
Season as you wish. I used salt, pepper, and rosemary.
Cook on low for 6 hours.
Don’t forget to make gravy! I used 1 cup of drippings, 2 Tbsp of butter, and 2 Tbsp of flour. Heat without boiling until thickened. Best gravy ever!
