I love one pot meals. Makes clean-up easy!

Crock Pot Roasted Chicken and Veggies

Add chicken to crock pot and brush with butter and lemon juice. I used leg quarters.

Cook on low for 6 hours.

Don't forget to make gravy! I used 1 cup of drippings, 2 Tbsp of butter, and 2 Tbsp of flour. Heat without boiling until thickened. Best gravy ever!

Claytor Lake Camping & Catching Up

I feel like I am always playing catch-up. I am loving the warm fall days and cool evenings. Friday and Saturday were near 80ΒΊ here so I got lots of yard and garden work done. All that’s left to eat from the garden is beets. We had beet and potato soup yesterday. If you haven’t tried it yet, do so, you’ll love it! I just never got around to planting a fall garden so I am missing out on all the greens that I grew last fall.

Quentin was on vacation week before last. We got lots of home repairs done, lots of hunting in, and a little camping. We have had a ton of crazy water problems. First from the hot water heater then from a leaky roof. This is my first year hunting. I am enjoying my time in the woods and with Quentin. It provides a good workout that’s for sure. I have shot at(and missed) one turkey. We really enjoyed the last wild turkey we had and hoping to have another. Our camping trip was to Claytor Lake. It is my favorite place to camp, and we always enjoy ourselves.

Virginia Beach

Hi, it’s been a while. But things are slowing down, and I can’t wait to catch up with everybody! I can’t wait to see what you have been up to.

I’m probably going to be bombarding you with pictures. πŸ™‚ I will start with Virginia Beach pictures. Quentin had to go for work last month, so we all went along. I have always thought the Norfolk, Virginia Beach area is the prettiest. I don’t like the big city, crowdedness feel of it, though.
