Baked Black Bean Veggie Burgers


Try these and you’ll never need another bean burger recipe ever! I tried several recipes that I liked before I found this one that I LOVED.  I think it’s the cumin and chili powder that make me like these so good.

I did have mine on Romaine lettuce, but Quentin and the kids used buns and added cheese. I am just on a lettuce kick right now. Anybody else enjoy dill pickles wrapped in lettuce? 🙂

I got the recipe from I looked for the recipe so I could link back to it but couldn’t find it.

Baked Black Bean Veggie Burgers

1 (16oz) can black beans, drained and rinsed

1/2 green bell pepper(I always leave this out)

1/2 onion(I use onion powder)

3 garlic cloves

1 egg

1 Tbsp chili powder

1 Tbsp cumin

1 tsp hot sauce

1 cup breadcrumbs

1. Pre-heat oven to 375º.

2. Dry off the beans as much as possible. In a bowl, mash beans with a fork until thick and pasty.

3. Finely chop bell pepper, onion, and garlic and stir into mashed black beans.

4. In a small bowl, stir together egg, spices, and hot sauce.

5. Stir egg mixture into beans. Mix in the bread crumbs until the mixture is sticky and holds together. Divide the mixture into four patties.

6. Place patties on lightly greased baking sheet. Bake about 10 minutes on each side.

Wintertime Blues & Garden Prepping

Late winter blues are the worst! And to beat winter blues, I put together  this little greenhouse that Quentin bought me at the end of last gardening seasoning on clearance for 90% off. Seriously, it was only about two or three bucks!


Seeds have started arriving in the mail. Thursday, I got super sugar snap pea, bull’s blood beet, national pickling cucumber, scarlet nantes carrot, hybrid jet star tomato, and premium crop broccoli seeds. The premium crop broccoli is supposed to resist button heads, so I am hoping for some huge heads of broccoli this spring.

006I plan to use the mini greenhouse to start broccoli, tomatoes, peppers, lettuce, chives, and parsley the first week in March. I will plant my sugar snap peas directly in the ground mid March.

It’s easy to make “free” seedling pots out of newspapers. I have made and used them before. The best part of all is you can pop the whole thing in the ground, plant and all!

My winter sowing experiment seems to be going well. The jugs look nice and moist but not frozen. I am anxious for warm weather to see how they grow.

We Got Snow & The Yummiest Philly Cheese Steak Ever!


We got snow and extremely cold temps along with it! We are occupying ourselves indoors where it’s nice and warm with games of Monopoly and Rummy. I won a couple of games of Monopoly myself, but Madison did an amazing job at one game herself. She really skunked us all!


Last night I made a double batch of this Philly Cheese Steak Recipe. It is the best I have ever eaten and even makes a great topping for pizza! I know I jotted the recipe down from someplace online but can’t remember where.


Philly Cheese Steaks

1 lb steak (I used venison)

1/2 tsp salt

1/2 tsp pepper

1/2 tsp paprika

1/4 tsp cayenne(I always leave this out)

1/2 tsp onion powder

1 1/2 tsp Italian seasoning

3 T olive Oil

1/2 onion

1-2 green peppers

8 oz mushrooms

cheese(I used mozzarella. Pepper Jack goes really good too)

hoagie rolls(we ate ours on Romaine lettuce)

Place steak in a large bowl. In a small bowl, mix salt, pepper, paprika, cayenne pepper, onion powder, garlic powder, and Italian seasoning together.  Sprinkle on beef and stir to combine. Heat half of oil over med-high heat. Saute beef to desired doneness. Remove from heat and keep warm. Heat remaining oil and saute veggies. Add steak to veggies and keep warm. Preheat oven to broil. Butter hoagie buns and lay a slice of cheese torn in half over bottom of each bun. Divide steak and veggies over bun and add another slice of cheese. Place in oven until cheese is melted.

These smell and taste amazing! Quentin asks for these to take to work quite often. Madison made up some peanut butter cookies for dessert.


Maybe snow days aren’t so bad after all!

Homestead Happenings

A lot got done on our little homestead this week. There were several days of warmth and sunshine. I love sunny work outside kind of days!

I started fencing in our flower beds and fencing out our dogs. Dogs and flower beds do not mix.


With a little luck this bed will soon be taken over by hostas. They will more than likely hide the fence.


I was also able to dig and till a place in the garden to plant asparagus.


Can’t wait until the garden looks more like this!


So I can do lots of canning to fill my new pantry shelf. These were on clearance at Home Depot this week. It looked much smaller in the store.


I covered the silky coop with a tarp to keep the cold winds out and gave them plenty of hay. Our temps will get down near 0º the next few days. We have a hen in there setting. We should have baby chicks next month!


We just have to endure a few more weeks of cold temps then it will be fun in the sun. Spring is definitely on its way. The crocuses told me so!

This Weeks Menu & Grocery Budget & Garden Planning

It’s been a while since I shared our menu. We are starting to run out of garden veggies now. We have used up all our green peppers and only have a couple more bags of tomatoes left. We have started planning this years garden. We will be planting sugar snap peas about mid March and carrots and broccoli the first of April. I am planning a large carrot patch and have been fertilizing both the pea and carrot patches heavily with bunny berries. I am going to spend a bit of time reading up on growing peas and carrots this week. So far I really like this post about growing carrots.

We use Rodale’s Garden Problem Solver each year. It is full of information about pests and diseases and gives you an idea of when you should plant. We have decided to start using it as our garden journal to write down the dates we plant and such each year.

002001Our temps are supposed to get up in the 50s in the coming week. That will hopefully give me the chance to combine everything in the garden that needs burned into one pile.

Mon. -Baked Hot Legs & Italian Pasta Salad

Tues.- Pot Roast, Potatoes, Carrots, & Onions

Fri.- Hot Dogs & Roasted Potatoes

Breakfast– Cereal, Eggs, Toast, Oatmeal*

Lunch– Baloney Sandwiches, Carrots, Grapes, Strawberries, and/or Bananas

Snacks- Homemade baked goods, fruit, & reheated leftovers-yum!

We spent $100.57 which also included dog food, toiletries, and new under clothes. 🙂

*Madison has really been enjoying this oatmeal recipe created by herself.

Refrigerator Oatmeal

1/2 Banana

Spoonful of Peanut Butter

1/2 cup Oats

1/2 cup Milk

Combine and refrigerate over night. Enjoy!
