Double Chocolate Zucchini Cookies

These cookies were so good that I made up some 1 cup bags of shredded zucchini for the freezer just to use in this recipe. I didn’t have any chocolate chips so used two chopped up Hersheys Bars instead. I baked mine at 350º for 7 minutes.


Double Chocolate Zucchini Cookies

1 cup grated zucchini
1 cup brown sugar (packed)
1 teaspoon baking soda
1/2 cup butter or 1/2 cup margarine
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon cinnamon
2 tablespoons cocoa
1 cup chopped walnuts
6 ounces semi-sweet chocolate chips

Combine zucchini, brown sugar, baking soda and margarine.
Mix egg and vanilla into zucchini mixture.
Add remaining ingredients.
Chill dough 1 hour in the refrigerator.
Drop by rounded teaspoonfuls.
Bake at 375 degrees for 10-15 minutes —
Do not over bake, these will be soft to the touch but, will firm after sitting.
